Overview on ISO 22000 – Food Safety Management System Manual

ISO 22000 is a Food Safety Management System (FSMS) that can be applied to any organization in the food chain. ISO 22000 FSMS allows a company to show customers that they have a food safety management system was put in place. This provides customer confidence in the product. This becomes increasingly important as customers demand and healthy food processors require ingredients that have obtained their suppliers to be sure.

About ISO 22000 Manual:

ISO 22000 Manual establishes food safety and sets out food security of appropriate organization to carry out Food Safety Management System (FSMS). This manual defines the management arrangements for the management of operations and activities in accordance with ISO 22000. These are high-level plans or protocols for the implementation of food safety, quality assurance and customer satisfaction.

Requirement of Traceability within Food Safety Management Systems

ISO 22000 is a Food Safety Management System that can be applied to-any organization in the food chain. ISO 22000 Allows a company to show customers that they have their food safety management system was in place. This Provides customer, which is becoming more and more significant as customers demand safe food and food processors require ingredients that obtained from their suppliers to be safe.

Considering ISO 22000 food safety requirements, traceability is the ability to track any food through all stages of production, processing and distribution (including importation and at retail). This helps to identify the root causes easily, at the same time it focuses on the internal process. The traceability system is a technical tool to assist an organization to confirm its stated objectives and is applicable when necessary to determine the history or location of a product or its components.

Traceability is needed which must be implemented in all sections of the food chain and the information that should be accessible. Traceability should mean that movements can be traced one step backwards and one step forward at any point in the supply chain. As to the traditional traceability concept of ISO 22000, it is basically depend on the place of food chain to isolate any specific actor in the food supply chain where any individual operation can be segmented. ISO 22000 does not explain much about the traceability system, but it makes traceability as an important parameter for food security. Meanwhile, the reference document for traceability is ISO 22005 which clearly defines the preferred system to be in place to achieve certification to the ISO 22000 standard.
